Basic Jambalaya Recipe

 Spicy as you like Jambalaya recipe.

Ingredients

  • 1 pounds Black Forest honey ham, cubed
  • 1 1/2 pounds smoked Cajun sausage, sliced 1/4″ thick
  • 1/2 pounds mild smoked sausage, sliced 1/4″ thick
  • 1 pound cooked chicken breast, cubed
  • 1 large onion, chopped
  • 1 roasted red bell pepper, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 ribs celery, chopped
  • 5 cloves garlic, chopped
  • 1 14-oz. can diced tomato, slightly drained
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 teaspoon Cajun seasoning, or to taste
  • salt and black pepper
  • 2 cups uncooked long-grain rice
  • 2 1/2 cups chicken stock or water
  • 1/2 cup dry red wine (optional)

Method

  1. In a large heavy-bottomed skillet with a tight cover, brown the sausage. Pour off the excess drippings. Add the onion and stir over medium heat until slightly soft, about 3 minutes. Add the ham, chicken, roasted red pepper, parsley, celery, garlic, tomato, thyme, bay leaves, Cajun seasoning, salt and pepper. Bring to a boil and cook, stirring, for about 5 minutes.
  2. Add the rice and chicken stock or water and stir well. Cover and simmer over low heat for 20 minutes, or until the rice is almost done. Do not uncover until you check for doneness, near the end.
  3. Add the wine, if youre using it (if youre not, you may or may not have to add a bit more water). Simmer over medium heat for another 5 minutes, stirring constantly.
  4. Fluff with a fork and serve.

Serves 8.
